Why this works

These tacos are built on contrast: soft beans, crisp tortillas, sweet corn, and a sharp lime topping that cuts through the richness. They come together in minutes but still feel like a proper meal.

The beans carry most of the flavour, so they are seasoned generously with smoke and lime rather than left plain. Warming the tortillas before filling is the small step that stops them from tearing and makes the whole taco taste fresher.

Ingredients

Metric

  • 2 cans black beans, drained
  • 8 small tortillas
  • 150 g sweetcorn
  • 1 red pepper, diced
  • 1 tsp smoked paprika
  • 1 lime
  • 1 avocado
  • Fresh coriander
  • 1 tbsp oil

US

  • 2 cans black beans, drained
  • 8 small tortillas
  • 1 cup sweetcorn
  • 1 red pepper, diced
  • 1 tsp smoked paprika
  • 1 lime
  • 1 avocado
  • Fresh cilantro
  • 1 tbsp oil

Method

  1. Warm oil in a pan and cook the pepper until softened.
  2. Add black beans, sweetcorn, paprika, salt, and a splash of water.
  3. Mash a few beans to make the filling cohesive, then heat through.
  4. Warm tortillas in a dry pan or microwave.
  5. Fill tacos and top with avocado, lime, and coriander.

Cook's notes

  • Drain and rinse the beans well so they do not make the filling watery.
  • Warm the tortillas in a dry pan or directly over a flame for a few seconds per side.
  • Season the bean mixture generously — beans need more salt and acid than you think.
  • Build in layers: beans first, then crunch, then something creamy, then the lime topping.
  • Serve with extra lime wedges; a squeeze at the table brightens everything.

What can go wrong

The tacos are soggy

Drain the beans thoroughly and add any juicy topping at the last minute rather than piling it on early.

The beans are bland

Add more salt, a squeeze of lime, and a pinch of smoked paprika or cumin.

The tortillas split

Warm them first and do not overfill. Two thin tortillas stacked make a sturdier base.

Ways to change it

Chipotle version

Stir a little chipotle paste or adobo sauce into the beans for a smoky, spicy heat.

Add avocado

Top with sliced avocado or a spoonful of mashed avocado with lime.

Slaw on top

Add a handful of shredded cabbage dressed with lime and salt for extra crunch.

Substitutions

Black beans

kidney beans, chickpeas, lentils

Tortillas

lettuce cups, flatbread, rice bowls

Avocado

plain yogurt, salsa, grated cheese

Storage and Reheating

  • Refrigerate bean filling for up to 4 days.
  • Store toppings separately for the best texture.
  • Reheat the filling in a pan with a spoonful of water.

FAQ

Can I make these spicy?

Add chopped chilli, chipotle paste, or hot sauce with the beans.

Are corn tortillas required?

No. Flour or corn tortillas both work; use whichever is available.

Soft or crunchy shells?

Both work. Soft tortillas are easier to build and eat, while crunchy shells give more texture. Warm either one first.

Can I make the filling ahead?

Yes. The bean mixture keeps well in the fridge for up to three days; warm it gently before filling the tacos.
