Lemon Herb Chicken
Golden pan-seared chicken with lemon, garlic, herbs, and an easy pan sauce.
Why this works
This is a pan-sear built on contrast: deeply browned chicken on the outside, juicy meat inside, and a bright lemon pan sauce that lifts the whole plate. It is quick enough for a weeknight but feels more considered than a plain sauté.
The sauce comes from the same pan the chicken cooked in. A quick deglaze with stock or wine picks up all the browned bits, then butter and lemon turn it into something silky and sharp.
Ingredients
Metric
- 600 g chicken breast
- 1 lemon
- 3 garlic cloves, minced
- 1 tsp dried mixed herbs
- 1 tbsp olive oil
- 150 ml chicken stock
- Salt and black pepper
US
- 1.3 lb chicken breast
- 1 lemon
- 3 garlic cloves, minced
- 1 tsp dried mixed herbs
- 1 tbsp olive oil
- 2/3 cup chicken stock
- Salt and black pepper
Method
- Season chicken with salt, pepper, and herbs.
- Sear in olive oil over medium heat until golden on both sides.
- Add garlic for 30 seconds, then add stock, lemon zest, and lemon juice.
- Cover and simmer until the chicken is cooked through.
- Rest for five minutes and spoon the pan sauce over the chicken.
Cook's notes
- Pat the chicken dry before seasoning so it browns instead of steaming.
- Do not move the chicken for the first few minutes; a good sear needs undisturbed contact with the pan.
- Let the chicken rest for five minutes after cooking so the juices settle.
- Deglaze the pan with a splash of stock, wine, or water and scrape up every browned bit.
- Add lemon juice at the end so its brightness stays fresh rather than cooking off.
What can go wrong
The chicken stuck to the pan
It was moved too early. Give it time to release on its own, and use a well-oiled, properly heated pan.
The meat is dry
Use thighs or lower the heat slightly, and always rest the chicken before slicing.
The sauce is too thin
Let it reduce a little longer, or whisk in a small knob of cold butter to thicken and enrich it.
Ways to change it
Caper and lemon
Add a spoonful of capers with the lemon for a sharper, brinier sauce.
White wine sauce
Use a splash of white wine to deglaze the pan before adding the stock.
Herb swap
Trade the oregano for thyme, rosemary, or a mix of soft herbs at the end.
Substitutions
Chicken breast
chicken thighs, firm tofu
Mixed herbs
oregano, thyme, Italian seasoning
Chicken stock
vegetable stock, water plus extra seasoning
Storage and Reheating
- Refrigerate for up to 3 days.
- Slice leftovers for sandwiches, salads, or wraps.
- Reheat gently with pan sauce to prevent drying out.
FAQ
How do I know the chicken is cooked?
The centre should reach 75°C / 165°F, with no pink meat remaining.
Can I bake this instead?
Yes. Bake seasoned chicken at 200°C / 400°F until cooked through, then make the sauce separately.
Chicken breast or thighs?
Thighs are more forgiving and stay juicier. If using breast, pound it to an even thickness and cook it just until done.
What should I serve it with?
Rice, roasted potatoes, or a simple green salad all work well and soak up the pan sauce.
